Brothers specialize in family fare

One look at the walls at 2 Brothers Bistro in Bixby says a lot about the family that operates the new restaurant.
The U.S. Marine items come from Jeremy Founds, who co-owns the restaurant with his brother Robert. Jeremy was in the Marines for six years, including a year in Iraq.
The firefighter photos feature the Founds' late grandfather, Marvin Williams, who spent some 25 years with the Bixby Fire Department.
Many of the rural paintings on the walls were done by their grandmother, Ruth Williams, but her biggest influence is in the kitchen, where some of her recipes are cooked to perfection.
"For a long time she had Ruth's Cafe in downtown Bixby (where Scott's Hamburgers operates today)," Jeremy Founds said. "She passed away about three months ago, but I know she's watching over us."
Founds said the menu at 2 Brothers Bistro is a mix of his grandmother's recipes and those of friend Chuck Stilwell's, mom Susan's and brother Robert's.
"Chuck is good with the Cajun stuff, and Robert is especially good with the Italian. He formerly worked at Joe Vigg's and some other restaurants," Founds said. "Mom does a little bit of everything. A lot of our recipes are for traditional dishes that we just tweaked a little, and we even kept some things from the restaurant that used to be here (Rookies Neighborhood Grill)."
An example of a slightly tweaked dish is the restaurant's eggs Benedict ($6.99). The traditional layers of toasted English muffins, ham, poached eggs and hollandaise sauce is augmented with a layer of grilled spinach, and the result is delicious.
"We cut the ham slices from a pit ham, like one you would buy for Christmas or Easter," Founds said.
Another popular breakfast item is The Bomblet ($6.99), an omelet that includes sauteed garlic, sausage, bell peppers, onions and cream cheese, all topped with cheddar cheese. It is served with hash browns or grits and a choice of toast or biscuits-and-gravy.
As with all Oklahoma diners, 2 Brothers Bistro is proud of its chicken-fried steak ($8.99), and it is a good one. The meat is double hand-breaded, and heavy cream is used in the breading. The crispy and tender chicken-fried then is covered with cream gravy and served with mashed potatoes and gravy and the choice of another side and a salad.
The chicken-fried also shows up with the breakfast dishes, served with an egg and hash browns or home fries, and among the sandwiches, where it sits between pieces of buttered Texas toast and comes with fries and gravy.
The menu includes a wide-ranging assortment of dishes, including Cajun catfish etouffee, fried catfish, penne pasta alfredo, butterfly coconut shrimp and flat iron steak.
In addition to his mother and brother, Jeremy Founds said his fiancee Kendoll Bates and Robert's wife Shelley also work at the restaurant.
The hours for 2 Brothers Bistro are 7 a.m. to 2 p.m. Sunday-Thursday and 7 a.m. to 9 p.m. Friday-Saturday. It takes all major credit cards except American Express.
