Boneless beef short ribs braised in Marsala, beef stock and tomato on herb risotto with creme and butter, $16
"I've had risotto all over Tulsa. I think ours is very, very, very good, because we know how to fix risotto. It takes 30 or 45 minutes to make risotto correctly. You can't rush it. You can't make it in 15 or 20 minutes. The short ribs have a wonderful, very gentle, flavor. Rather than eat the pieces of short rib individually, without the risotto, I like to stir the whole thing up and go after it."

Cedar salmon stuffed shrimp with coconut curry drizzle, $16
"The coconut curry (drizzle) is a dish that's kind of Thai influenced, so it's got lime and coconut and not your traditional Indian curry, it's more of a Thai curry. It's mild, but it still has that heat on the back-end of it. The coconut milk mellows it out, to where you get that nice curry flavor. It still has some heat, because I love the heat, but it's not overpowering."

Blackened beef tenderloin with jalapeno cilantro Béarnaise sauce, $22
"We quick sear it on the grill, then throw it on the Hasty-Bake. We're a lot about the sweet and spicy, or smoky and spicy. It's kind of a signature thing we do. The texture of it seems to be a little more tender, like a veal."
