Video: Nibble on a striking array of scratch items

I was chatting with Emeline Bauder as I cut into a fabulous French toast breakfast at her deli-bakery Nibbles in south Tulsa.
She was telling me about another breakfast item, the deluxe breakfast sandwich ($6.95), which includes eggs over medium, bacon, cheese, lettuce and tomato on toasted bread.
"The eggs are cooked so they just ooze out a little as you bite into the sandwich," Bauder said.
For a moment I wished I had gone the sandwich route, but then I turned back to the French toast ($5.95) with powdered sugar sprinkled on house-made honey-oatmeal bread and drenched in hot maple syrup and realized I was in fine form either way.
"You also can choose to have the French toast on cinnamon-raisin bread or with fresh fruit or Bavarian cream," Bauder said.
That's the way it is at Nibbles, which, at first glance, seems to have a limited menu but on further inspection reveals a stunning selection of made-from-scratch items.
Mixed in with the familiar biscuits-and-gravy, omelets, quiche and tuna salad are such choices as teriyaki-glazed salmon, Asian spring rolls, chicken rosemary riesling, Wellington steak potato, chicken pasta primavera and crimps.
Crimps ($9.50 dinner portion) have been a signature dish at Nibbles since the deli opened six years ago.
They included a mixture of seven whole fresh shrimp, cream cheese and chives rolled inside a delicate spring roll wrapper then fried, and they were delicious.
In combo with spring rolls they are $7.50, or served with fries and a salad they are $8.25 at lunch.
The marinade in the chicken rosemary riesling ($10.95) gave the chicken a pleasing flavor, and it was served over a bed of moist rice.
The quaint, cozy dining room would seem to appeal mostly to women, but some of the menu items, such as Philly cheesesteak sandwich, deluxe bacon cheeseburger, steak-filled baked potato and a seven-item skillet breakfast have enough muscle for man-sized appetites.
"I think we have a sufficient variety of items," Bauder said. "I've pretty much stayed with the things that have worked best since I opened."
The array of gorgeous dessert selections inside a glass display case was enough to undermine any resolve that might have been lingering from a poorly formulated diet plan.
Carrot cake, coconut cream pie, chocolate chip cookies, brownies, parfaits, cream puffs, fruit tarts and lemon bars were just a few of the attractions.
We sampled pieces of chocolate mocha cake and red velvet cake ($3.75 each) that were sweet and rich.
The beverage menu includes a full line of specialty coffee drinks.
"I have a new machine that grinds coffee for one cup at a time, so it is completely fresh for the customer and eliminates a lot of waste for me," Bauder said. "And I can make all of the coffee drinks, like espresso, with it, too."
Bauder said she serves many bridal luncheons and high teas with finger foods in the 30-seat dining room. A 24-hour advance notice is required for those types of functions.
Nibbles falls under Bauder's Grandeur Affaires Inc. umbrella, which offers wedding cakes, party trays and catering, including delivery to business meetings.
Nibbles is open 9 a.m. to 3 p.m. Monday and 9 a.m. to 5 p.m. Tuesday-Saturday.
